Add all ingredients except for the chopped apples to a blender (e.g. NutriBullet) or food processor and blend until smooth.
Empty into 1 or 2 bowl (depending on if you want one large serving or two smaller). Pile chopped apples on top. Microwave on high for 90 seconds. (Make sure you have enough room in your bowl for the batter to rise. It's okay if it rises over the edge, it should have enough structure to not spill over).
Sprinkle with additional cinnamon and (optionally) top with whipped cream or ice cream.
