Apple Pie Microwave Baked Protein Oats
These apple pie protein oats are comforting and delicious, so light and fluffy, packed with added protein, and can be made in minutes from start to finish. Have your apple pie for breakfast! Top with whipped cream or ice cream (e.g. Halo Top) for an even more decadent treat.

- NutriBullet blender any blender or food processor will work
Ingredients
- 50 g rolled oats either quick or old-fashioned
- 100 g fat-free milk I use Fairlife
- 100 g applesauce unsweetened
- 20 g unflavored whey protein
- 5 g chia seeds
- 1.3 g baking powder
- 0.8 g salt
- 1.3 g cinnamon ground
- 0.4 g stevia powder
- 0.8 g vanilla extract
- 4 g butter
- 50 g apples chopped
Instructions
- Add all ingredients except for the chopped apples to a blender (e.g. NutriBullet) or food processor and blend until smooth.
- Empty into 1 or 2 bowl (depending on if you want one large serving or two smaller). Pile chopped apples on top. Microwave on high for 90 seconds. (Make sure you have enough room in your bowl for the batter to rise. It's okay if it rises over the edge, it should have enough structure to not spill over).
- Sprinkle with additional cinnamon and (optionally) top with whipped cream or ice cream.

Notes
- You could leave out the butter to save some calories, or substitute it with coconut oil, but leaving it in adds a nice flavor
- You can substitute the milk for almond, cashew, coconut, etc
